Light Soy Sauce (Igeta Usukuchi Shoyu)Usukuchi means light tasting. It is a young soy sauce, aged for a shorter time than dark shoyu. In this case, aged for 1. 5 years. Light soy sauce has a saltier taste than dark soy, even though it has less salt, and is not quite as much flavour as dark soy. They are not interchangeable for each other. This is a traditional shoyu best used for finishing or seasoning. Please note we do not refund or exchange food products.
