We call this 'Bad Fermentation' because not all the cacao beans change color to brown as they should during the fermentation process. This is a so called 'bad fermentation' and all it does is to give it a very interesting flavour profile. It is also a chocolate that ages very well. It is a very unique chocolate with loads of flavour, good tanins and notes of baked plums.
